Summer
Fruit Soup
Ingredients:
2 ripe peaches, stoned and sliced
4 ripe plums, stoned and halved
3 ripe apricots, stoned and halved
2 apples, peeled and sliced
small container strawberries small container cherried, stoned
2 oz lemon juice
2 cups water
4 oz sugar
1 1/2 cup sour cream
(optional) splash of wine
Instructions:
Cook the fruits, lemon juice, sugar
and water in a large pot. Simmer and cover for 25 minutes. Mash
half of the fruits, add the wine and simmer for 5 minutes longer.
Serve chilled, adding a tablespoon of sour cream to each bowl if
desired.
