Gazpacho

Ingredients:

one 28 oz. (large size) can tomatoes
one 19 oz jar / tin tomato juice
1/4 - 1/2 green pepper, diced
3 -4 small cucumbers, peeled and diced
1/2 medium onion, in chunks
1 clove garlic
1 Tbsp. olive oil
2 Tbsp. red wine vinegar
2 - 3 drops tabasco sauce (hot red pepper sauce)
few sprinkles salt
fresh grated black pepper (about 4 turns of the grinder)

 

Instructions:

Drop garlic, then onion into feed tube while the machine is on. Put green pepper and cucumber and tomatoes into processor and process with off/on. Add oil, vinegar, pepper sauce, salt & pepper and process a bit more. Pour into bowl or container. Pour in juice and stir. Chill. You should make this soup one day ahead. If you can't, put the can of tomatoes and tomato juice in fridge the day before and it will already be chilled. This makes 8 - 9 portions. You can put out several different garnishes in small bowls and people can help themselves: Croutons or soup nuts, chopped parsley, green onions, basil.
