Yet another Mock Chopped Liver recipe!

This recipe for mock chopped liver is made without eggs and tastes more like the "real thing" than any other recipe!

Ingredients:

2 cups water,
1 cup lentils,
2 chicken or vegetable bouillons,
1 teaspoon olive oil or margarine,
1 large onion,
chopped,
1 cup walnuts,
salt and pepper to taste.

 

Instructions:

In water, cook lentils with bouillon cubes in 2 qt. saucepan, covered about 30 min. or until tender. More water can be added, if necessary. Drain. Heat oil in skillet. Saute onion until translucent. In food processor, process lentils, onion and walnuts until desired consistency. Season to taste with salt and pepper. Chill. This version of mock chopped liver also freezes very well.
