Potatoes Au Gratins

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

Ingredients:

1½ cups light cream
2lb new potatoes, pared and very thinly sliced
1½ teaspoons salt
¼ teaspoon pepper
1 cup grated Gruyere cheese (6oz.)

Directions: Preheat oven to 350F. In small saucepan, heat cream just until bubbles form around edge of pan. Pour ¼ cup cream into 1½ quart, shallow baking dish. Arrange a third of potatoes in dish; sprinkle with a third of the salt, dash pepper, and a third of the cheese. Add a third of the remaining cream. Repeat twice, using rest of ingredients. Set baking dish in shallow pan. Pour hot water to 1-inch level around dish. Bake, covered 30 minutes, then bake, uncovered, 1 hour longer. Makes 8 servings.
