Pickled Carrots

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

Ingredients:

¾ cup vinegar
¾ cup water
2 teaspoons mustard seed
1 (2-inch) cinnamon stick, broken in 3 pieces
3 cloves
Artificial sweetener to equal ¾ cup sugar
2 cups cooked julienne carrots

Directions: Combine vinegar, water, mustard seed, cinnamon, and cloves. Simmer 8 minutes. Add sweetener, and simmer 2 minutes longer. Cool. Pour over carrots in bowl. Refrigerate 8 hours or overnight Drain before serving. Divide evenly. Makes 4 servings.
