Kasha

Ingredients:
1/8 pound margarine
1 medium onion
1 small green pepper
2 stalks celery
1 clove garlic
8 zuchinni squash
2 medium tomatoes
½ pound mushrooms (1 medium can)
3 c. cooked kasha
½ c. grated parmesan cheese
Directions: Chop onion, green pepper and celery. Saute in margarine
in large skillet until soft. Add mashed garlic and sliced squash.
Cook until sqaush is soft, turning sev. times to prevent sticking.
Add chopped tom. and cook 5 min. Stir in kasha and cheese. Put in
casserole sprinkle top with little more cheese. Dot with butter.
Cover and bake in 350F oven 30 – 40min.
