Herbed Kasha Pillar

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

Ingredients:

½ cup chopped onion
1 tablespoon butter or margarine
1/1/2 cups water
1/1/2 teaspoons instant chicken bouillon granules
½ teaspoon dried basil, crushed
1/3 cup long-grain rice
1 beaten egg
1/3 cup coarsely ground kasha [roasted buckwheat grouts]
2 tablespoons snipped parsley

Directions: In a 2-quart saucepan, cook onion in butter or margarine until onion is tender but not brown. Add water bouillon granules and basil. Bring to boil; add rice. Reduce heat; simmer covered 10 minutes. Meanwhile, in a bowl mix the egg and buckwheat grouts. Stir into rice. Simmer covered 10 minutes longer, or until grouts and rice are tender. Before serving, stir in snipped parsley.
