Glazed Sweet Potatoes

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

Ingredients:

6 sweet potatoes
1c. brown sugar
1 T. potato starch
2c. orange juice
¼ tsp. salt
¼ c. margarine
½ c. nuts (coarsely chopped)

Directions: Scrub 6 sweet potatoes. Boil covered 45 min. or until fork tender. Cook, peel, and cut in ½. In heavy saucepan mix brown sugar, potato starch and orange juice. Add salt. Cook, stirring until thickened. Add margarine. Place potatoes in shallow baking dish. Pour sauce over pot. Top with nuts. Bake at 350F for 20 min.
