Gazpacho

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

Ingredients:

3 medium tomatoes
1 small cucumber, chopped
1 medium green pepper, chopped
2 green onions, sliced
1 clove garlic, minced
1 can (12 –ounces) vegetable juice cocktail
2 tablespoons vinegar
1 teaspoon olive oil or cooking oil
¼ teaspoon salt
¼ teaspoon dried basil, crushed
Several dashes bottled hot pepper sauce

Directions: Peel and coarsely chop tomatoes. In a large mixing bowl combine tomatoes, cucumbers, green pepper and green onions. Stir garlic, vegetable juice cocktail, vinegar, olive oil, salt, basil and hot pepper sauce into tomato mixture.
Cover and chill in the refrigerator for several hours or until thoroughly chilled. Ladle into soup bowls.
