Eileen's Savoury Rice

A hot hors d'oeuvres

Ingredients:

120gm (4 oz) rice
55gm (1 lb) chicken livers fried
1 Onion
Chopped Parsley
1 cup stock (chicken soup)
1 cup cooked peas (or canned peas)
4 tablespoons oil
3 Tomatoes
1 clove garlic
Salt & pepper to taste
1 cup sliced mushrooms (fried)

 

Method:

Heat the oil and stir in the rice, the chicken livers which have been
diced, and the sliced tomatoes. Add chopped onion, garlic, parsley,
salt & pepper. Cook, stirring for 15 minutes, then add the stock.
Cover and cook gently until the rice has absorbed the stock. Add
cooked peas and mushrooms shortly before serving.
