Cajun Fries

Cajuns are a group of people in southern Louisiana descended from French colonists exiled from Acadia in the 18th century. They have their own marvelous style of cooking.

 

Ingredients:

4 potatoes
nonstick cooking spray
1/4 cup margarine, melted
3/4 cup fine dry bread crumbs
1/4 teaspoon red pepper flakes
1/2 teaspoon sage
1 teaspoon garlic salt
1/2 teaspoon basil

 

Method:

Preheat oven to 375 degrees Fahrenheit.
Spray a large baking pan with the nonstick spray.
Peel potatoes and slice into strips.
Dip in melted margarine.
Mix together remaining ingredients.
Roll potatoes in the mixture, and put in pan in a single layer.
Bake 45 minutes.

Serves three or four.
