Apple & Butternut Squash (Low-Fat)

Our thanks to Ali Feldman and her mother for this great recipe!

 

Ingredients:

3 Butternut squashes
8 red delicious/mackintosh apples
1/2 cup of brown sugar
3 tablespoons of cinnamon
1 tablespoon of margerine
1 cup of rice crispies/Special K

 

Method:

Pierce the squashes and microwave them for 25 minutes.
Cut apples into parts and boil them until extremely soft.
Scrape out squash (Make sure no seeds get mixed in) and put it into a baking pan.
Drain apples and add them to the squash.
Add sugar, margerine and cinnamon.
Mix everything together.
Still for about two minutes.
Then bake for 20 minutes.
Take out of over, sprinkle cereal on top and bake for another 10 minutes.

It is delicious. I made it this past SHABBOS!
