Orange-Gingered Chicken

Ingredients:

4 tablespoons olive oil
1 lb boneless chicken breast
2 cloves of garlic
2 tsp minced ginger
3 scallions
1 cup snowpeas
zest of 1 orange
juice of 1 orange
1/2 cp orange juice
1 tblsp corn starch
1/2 cup Canton Gingered liqueur (or other Ginger liquor)
2 Tblsp minced chives
3 Tblsp parsley
1/2 cp slivered almonds

 

Instructions:

Heat oil in skillet or wok. Add Chicken, garlic & ginger. Sautee
Add scallions, snowpeas, orange zest & some juice. Continue to sautee. Mix OJ w/ corn starch. Add to wok.

Add liqueur, chives & parsley. Top w/ toasted almonds.
