Fruit Spiced Beef Pot Roast

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

4 pounds lean, boneless beef
2 tblsps fat
2 tsps salt
1 tsp mixed pickling spices
1 pound mixed dried fruit
¼ pound mushrooms, sliced
1 stalk celery, diced
1 carrot, diced

Directions: Brown the meat on all sides in the fat. Remove meat and pour off fat. Add water and bring to a boil, add spices. Place meat on a rack in the pot and cover. Simmer 2½ hrs. Add salt vegetables and fruit, replace cover and simmer 1 hour until meat is tender. Remove meat and slice. Reheat over low flame. Serve with fruit and vegetables arranged attractively around slices of meat. Pour gravy over and serve with rice or kasha as the starch. Serves 6.
