Smoked Salmon Club, Wasabi cream

Ingredients:

12 ounces whipped cream cheese
1 red onion, diced small
1 head bok choy, diced small
1 hot house cucumber, diced small
2 tablespoons sesame seeds, toasted
1 sheet nori, crumbled
1 teaspoon prepared wasabi
1 red bell pepper, diced small
1/2 teaspoon toasted sesame oil
1 tablespoon low salt soy sauce
2 stalks scallions, diced small
4 halved sesame bagels
1 pound sliced lox
1 avocado, peeled, deseeded, quartered and fanned

 

Directions:

In an electric mixer, with the paddle attachment combine the cream cheese, red onion, bok choy, cucumber, sesame seeds, nori, wasabi, sesame oil and soy sauce. With a rubber spatula, scrape sides of bowl as necessary. Add scallion and pulse machine until just blended. Spread on each half of the bagels. Top with lox and decoratively fanned avocado. Serve open faced.

Optional: Sprinkle with sesame seeds and drizzle with soy sauce to garnish. Serve with an Oriental salad.
