Cottage Cheese and Fruit Ring

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

Ingredients:

1 lb. cottage cheese
1 lb. can sliced peaches
1 tbspn lemon juice
pinch of salt
1 tbspn sugar
½ cup sour cream
1 large can fruit cocktail
1 tbspn corn starch

Directions: Drain juice from canned peaches and reserve liquid. Add lemon juice, salt and sugar to liquid. Stir in cornstarch and beat until smooth. Cook over low heat until thick and clear. Cool. Stir in cottage cheese and sour cream. Fold in drained peach slices. Pour into butter ring mold. Chill at least 2 hrs. Insert knife around edges of mold and unmold ring very carefully. Place on a round serving dish. Garnish with shredded greens edging the mold. Fill the center with drained fruit cocktail. Serves 6 – 8.
