Blintzes

Crepe:

1 cup flour
1/2 tsp salt
4 eggs
1 cup milk
butter or cooking spray

 

To make crepes:

Mix all ingredients until smooth. In small egg pan spray with cooking spray and heat pan. Pour small amount of batter into pan and cook over low heat for about 10 seconds. Take from heat and turn over to remove from pan and place on waxed paper. Repeat until finished. Makes approxamatley 35 crepes.

 

Filling:

1 lb dry curd cottage cheese
1 egg yolk
1 tbs suger
1 tbs butter melted
pinch of salt

 

To make filling:

Mix all ingredients until smooth. Using a tablespoon put onto crepe and roll push down the filling to even out. Repeat until done.

Cook in skillet with butter for a few minutes on each side until golden.
