Zucchini
Casserole

2 lb. med zucchini
1 large onion
5 eggs
½ c. chopped parsley
2 Tbs. fresh dill, snipped
1/3 c. matzo meal
salt, pepper to taste
3 TBS olive oil
Directions: Heat oven to 375F. Grate zucchini and onion using L.
holes. Put both in strainer and squeeze firmly to remove excess
liquid. Transfer to bowl and add eggs, parsley, dill, matzo meal.
Season generously with salt and pepper. Mix well. Heat 2 tbs oil
briefly in oven 8*8 casserole. Add zucchini mix. Sprinkle with 1
tbs oil. Bake 50 – 60 min. until set. Let stand 5 min. before
serving. Serve hot.
