Almond Cake

(Bake at 400F for 8 to 10 minutes; Makes 4 dozen cookies)
Swedish cooks, world renowned for their cookie baking, give us
a time-saving tip. Use whole almonds in the dough, then cut through
it with a knife to chop the nuts. slightly. Almond slices give decorative
pattern when these rich, crisp cookies are sliced and baked.
Sift…
1¾ cups sifted Flour
1 teaspoon double-acting baking powder
½ teaspoon salt
Cream together…
¼ cup butter or margarine
¼ cup other shortening. Gradually add
½ cup sugar, creaming well.
Add…
1 unbeaten egg and
1 tablespoon molasses; beat well.
Blend in…
the dry ingredients gradually. Turn out on a lightly floured board.
Add…
½ cup whole unblanched almonds. Form into a ball. Cut through
dough with a sharp knife to chop nuts. Knead dough into a ball to
distribute nuts evenly.
Place… on waxed paper and shape into a roll 2 inches in diameter.
Wrap in wax paper. Chill at least 2 hours overnight.
Cut… into 1/8 inch slices
and place on ungreased baking sheets.
Bake… In moderately hot oven (400F) 8 to 10 minutes until
light golden brown.
