Lemon Squares

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

Ingredients:

1 cup unsalted butter, softened
2 cups plus 1 tablespoon sifted all-purpose-flour
½ cup sifted confectioners’ sugar
4 large eggs, at room temperature
2 cups granulated sugar
Grated rind of 1 large lemon
6 tablespoons lemon juice
½ teaspoon baking powder
1½ cups chopped walnuts

Instructions:

Beat together butter, 2 cups of flour and confectioners’ sugar until fluffy. Scrape mixture into a greased 9 By 13-inch baking pan and smooth into a thin layer covering the bottom. Bake for 15 minutes in preheated 325F oven. Meanwhile, beat eggs and sugar until light. Add lemon rind and juice, and mix. Sprinkle tablespoon of flour and ½ teaspoon of baking powder over all, then pour in the nuts. Combine well. Pour lemon mixture into crust and return to oven to bake for another 35 minutes, or until filling is set. Let cool slightly, then cut into squares. Loosen crust around the edges before removing squares from the pan. Makes about 2 dozen.
