Lady Fingers

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

Ingredients:

6 egg yolks
¾ cup sugar
4 egg whites
½ cup sifted Passover cake meal
¼ cup sifted potato starch
Superfine sugar

Instructions:

1. Beat egg yolks with ¼ cup sugar until light and creamy. Beat egg whites until foamy. Gradually add ½ cup sugar and beat until stiff. Fold egg whites into egg-yolk mixture. Sprinkle sifted cake meal and potato starch over batter and gently fold in.
2. Line large shallow pans with brown paper. Using a pastry bag with a plain tube, pipe the batter onto the paper in even fingers, about 1 inch wide, 3 inches long and 2 rows deep. Dust with superfine sugar, shaken through sieve. Bake in a preheated 375F oven for 10 – 12 minutes. Loosen from paper immediately. Makes 2 to 3 dozen.
