Eight Egg Sponge Cake

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

Ingredients:

8 eggs
1/1/2 cups sugar
½ cup matzo cake meal
juice of 1 lemon
grated rind of ½ orange
¼ teaspoon salt

Instructions:

Separate eggs and beat whites until stiff, sprinkling in salt.
Beat yolks and sugar together until light. Then mix in lemon juice and rind.
Blend in cake meal and potato flour sifted together.
Fold in the egg whites.
Bake in a spring form or put in a loaf pan lined with wax paper, in a 325 degrees F. oven about 1/1/4 hours.
Invert pan and let cool before removing cake.
This can be made using all cake meal and no potato flour, providing the meal is of fine quality.

For variety add 1 cup of cut walnuts.
