Butterscotch Rice

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

Ingredients:

2 cups milk
½ cup raw regular white rice, washed
2 tbsp. butter or margarine
½ cup brown sugar, firmly packed
½ tspn. salt
½ tbsp. vanilla flavoring
Unsweetened chocolate, shaved

Instructions:

Heat milk in top of double boiler; add rice; cook, covered, over boiling water 30 min. Meanwhile, melt butter in small skillet or saucepan; stir in brown sugar and salt. Heat over low heat 3 to 5 min., or until sugar is almost melted. Let cool a bit; then slowly stir into hot rice mixture. Cover; cook ½ hour longer, or until rice is very tender. Stir in vanilla. Cool; serve warm or chilled with top milk or light cream. Sprinkle on shaved unsweetened chocolate. Makes 4 servings.
