Chanukah Chocolate Mousse
4 oz. chocolate (milk, semi-sweet or sweet)
4 eggs separated
1 cup margarine
whipped topping

Melt chocolate in microwave. Add egg yolks and margarine. Mixing with fork, cook over low heat until thick or cook in double boiler over rapidly boiling water, stirring until mixture becomes thick. Set aside to cool. Beat egg whites until stiff. Fold into chocolate mixture. Put in serving dishes and refrigerate. Top with whipped cream and serve.
Applesauce Cookies
2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon each nutmeg and allspice
2/3 cup seedless raisins
1 egg
1 cup sugar
1/2 cup vegetable shortening or oil
1 cup thick applesauce, canned or fresh
1/2 teaspoon baking soda
Sift together dry ingredients and add raisins. Combine egg, sugar and shortening and beat thoroughly. Stir in the applesauce to which baking soda has been added. Add to dry mixture, stirring until well combined. Drop from tip of teaspoon onto a greesed cookie sheet, at least an inch and a half apart each way. Bake 15 minutes at 350F (180C)or until lightly browned. When cold, cookies may be dipped with a bit of white frosting and decorated with a sliver of almond or bit of pecan or walnut.
Store these cookies in a well-covered container. Yields 48 cookies depending on size.
Kremslach (Czechoslovakian Latkes)
3 large potatoes
3 eggs
1 tablespoon sugar
grated rind and juice of one lemon
salt
oil for frying
Cook potatoes and mash. Let cool and add eggs, sugar, salt, lemon juice and rind. Form into patties and fry.
